Mexican food is made for having fun with. We love to stuff capsicums with brown rice and black beans, then top with chilli cheese and fresh, homemade guacamole for an easy-peasy family meal. If the kids can't handle spice, try a mild cheese instead.
3. Black Bean & Cheese Sliders
Like burgers, but smaller, sliders are a great way to hide veggies in your children's dinners. Try BBQ style black bean mini burgers with sun-dried tomatoes. Top with melted cheddar cheese and dress them up with an avocado and Greek yoghurt sauce. Yummy! 🍔🍔🍔
4. Rainbow pizza
Get the kids involved with making dinner by painting your pizzas with a medley of colourful vegetables. You can use almost anything, from mixed red and yellow tomatoes to green olives, fresh basil leaves and sprouting broccoli, but don't forget the bocconcini! 🍕🍕🍕
